What’s so good about it: Vegetables are low in calories and fats and contain good amounts of vitamins and minerals. All the Green-Yellow-Orange vegetables are rich sources of calcium, magnesium, potassium, iron, beta-carotene, vitamin B-complex, vitamin-C, vitamin-A, and vitamin K.
How many servings should be consumed: it is recommended that we consume about 7 – 9 servings of vegetables a day, yes that is a lot, however if you mix them up you’ll see that there hundreds of different delicious recipes.
Keep In mind that many veggies are also high in carbs and while they are important to be included in our daily diets some veggies should be limited in order to maintain your daily intake, or if you’re on a low carb diet, however most green veggies are also low in carbs. Just make sure you research before you eat.
